Ingredients:
Fruit Mixture:
1/3 cup (3 tbsp) rolled oats
2 bananas
2 tbsp yogurt or sour cream
1/3 cup (50 g) blueberries
1/2 tbsp ground cinnamon
1 tsp ground ginger
Dry Mixture:
1 heaping cup (120 g) oats
1/3 cup (4 tbsp) almond flour (or whole grain flour, brown rice flour)
1/2 tbsp ground cinnamon
2 tbsp shredded coconut
2 tbsp peanuts
1 tsp baking powder
1/4 tsp vanilla
2/3 cup (100 g) blueberries
Liquid Mixture:
2 eggs
3 tbsp yogurt or sour cream
1 cup (~220 ml) milk
2 tbsp butter or coconut oil
1/2 tsp salt
Sweetener to taste
Topping:
4 tbsp rolled oats
1 tbsp shredded coconut
1 tbsp coconut oil
1 tbsp nuts
Bake at 180°C (350°F) for 50 minutes.
