An airy berry oat pie with frozen black currants (or cherries/strawberries) – completely sugar-free and flour-free! Tender texture, bright berry flavor, and light sweetness from stevia.
Recipe for cooking and ingredients:
For the pie:
• 3 eggs
• 1½ tbsp stevia (or your favorite sweetener to taste)
• 5 tbsp coconut & vegetable oil blend (70 g / 2.5 oz)
• 5 tbsp yogurt (70 g / 2.5 oz)
• Pinch of salt
• 1½ cups rolled oats (160 g / 5.6 oz) → grind into flour
• 1 tsp baking powder
• 1 cup frozen black currants (200 g / 7 oz) – or cherries/strawberries
Pan:
• 18 cm diameter lined with parchment
• 180°C (360°F) — 50 minutes
Instructions
1. Whisk eggs + stevia.
2. Add oil blend + yogurt + pinch of salt, mix.
3. Grind oats into flour, add baking powder.
4. Combine dry and wet mixtures.
5. Pour half the batter into the pan.
6. Top with half the frozen berries.
7. Pour remaining batter, decorate with remaining berries.
8. Bake at 180°C for 50 minutes.
9. Let the pie cool.
10. Serve:
• This berry pie for diabetics is incredibly airy and delicious!

• Serve at room temperature or slightly warm – the berries add juiciness!
• Keeps in the fridge up to 5 days.
Diabetic tips
• Frozen berries → minimal GI.
• Net carbs per slice ≈ 10–12 g.
• You can fully replace stevia with erythritol.
