NO-OVEN EXPRESS COCONUT CAKE ๐คค๐ฅฅ
INGREDIENTS:

โช๏ธ 3 tbsp milk or plant-based drink (1.5 fl oz)
โช๏ธ 3 tbsp oil (1 fl oz)
โช๏ธ 2 tbsp sweetener (erythritol, sugar, or similar โ 0.7 oz)
โช๏ธ 1 tbsp shredded coconut (0.3 oz)
โช๏ธ 3 tbsp sifted flour (1 oz)
โช๏ธ 1 tsp baking powder (0.17 oz)
โช๏ธ Zest and juice of 1/2 lemon
โช๏ธ Chocolate chips to taste (about 1 oz)
โณ Time: 30 min | ๐ก Covered pot over medium-high heat
STEPS:
1๏ธโฃ In a bowl, whisk the egg with milk, oil, and sweetener.
2๏ธโฃ Add sifted flour, shredded coconut, baking powder, lemon zest, and juice. Mix well.
3๏ธโฃ Fold in chocolate chips.
4๏ธโฃ Pour the batter into a small pan or mold that fits inside a pot.
5๏ธโฃ Place the mold inside a pot with a little water at the bottom, cover, and cook over medium-high heat for 30 minutes.
