Speedy Creamy Spicy Prawn Pasta A pasta night dream, so simple to throw together and one I would make for myself but also for friends if I had them over. Feel free to add in a handful of spinach too for extra greens! Serves: 1 (easily multiplied)

Approx 505 kcal & 40g protein You will need 1 garlic clove, minced Large handful cherry tomatoes, halved (I use red and yellow) 1 tbsp tomato purée 1 tsp rose harissa paste (or ½ tsp chilli flakes) Handful fresh basil leaves 150g raw prawns 70g pasta 1 tbsp light cream cheese (about 25g) Parmesan, to serve Method
Bring a pan of salted water to the boil and cook the pasta according to packet instructions until al dente, reserving a mug of cooking water before draining. While the pasta cooks, heat a non-stick frying pan over medium heat and add the garlic and cherry tomatoes with a splash of olive oil or water, cooking for 2–3 minutes until the tomatoes begin to soften. Stir in the tomato purée and harissa paste and cook for 1 minute to deepen the flavour, then add the prawns and cook for 3–4 minutes until pink and cooked through. Reduce the heat, stir through the cream cheese and loosen with a splash of pasta water to create a silky sauce, seasoning to taste. Toss the drained pasta into the sauce along with the basil leaves, mix well, then serve immediately with a generous grating of parmesan. #pasta #healthyrecipes #quickrecipes
