Scrambled Oats
A new breakfast craze that I am utterly obsessed with. I would describe it as a highbrid between porridge and granola and it’s so good! I love how quick it is to make.

Makes 1 large serving
1/2 banana
1 egg
40g rolled oats
1/4 tsp cinnamon
Pinch of sea salt
4g light butter
100g fat free greek yogurt
10g vanilla protein powder
5g peanut butter
80g frozen mixed berries
Method
1. Add the banana to a bowl and mash until puree’d. Add the egg, oats, cinnamon and salt and mix until fully combined.
2. Add the butter to a frying pan over a medium heat, once melted add the oat mixture and fry for around 10 minutes, breaking up with a spatula and turning occasionally until you have small golden clusters.
3. Meanwhile, add the frozen berries to a microwave bowl and heat in the microwave for 2-3 minutes until defrosted and juicy, break up with a fork.
4. Mix together the yogurt and protein powder, top with the scrambled oats, berries and a drizzle of peanut butter.
