✨비스큐파스타✨(2인분) recipe by notoriousfoodie - 당근 1개, 샐러리 1개, 샬롯 2개 (양파 1개) 큐브모양으로 썰어주고, 마늘 3개와 홍고추 1개 슬라이스해주세요 - 단새우 15-20마리 껍질 제거해주고 살만 모아주세요 - 7마리는 좀 굵게 잘라주고 7마리는 잘게 다져줍니다. - 새우에 올리브오일 2T, 라임 제스트 1개, 레몬즙 1/4개 넣어 숟가락으로 잘 섞어 냉장고에 넣어주세요 - 냄비에 오일을 두르고 중강불에 새우머리와 껍질을 넣어 소금후추간 해준 후 3분간 볶아준 후에 채소들을 다 투하해주고 3분간 볶아주세요 - 토마토 페이스트 2T 넣어주고 화이트와인 300ml를 넣어준 후 또 4-5분간 볶아주세요 - 불을 중약불로 줄이고 물이나 치킨스톡 500ml 얼음 10개 정도 넣어주세요 - 다시 끓기 시작하면 월계수, 파슬리, 바질, 차이브, 타임으로 만든 허브부케를 묶어서 넣어주고 30분간 졸여주세요 - 허브부케를 빼준 후에 잘 갈아서 체에 한번 걸러주세요 - 그렇게 만들어진 비스큐는 큰 팬에 부어 끓을때쯤 파스타면을 넣고 비스큐를 추가해주며 알단테까지 익혀줍니다. 소금간을 더 하고 싶으시다면 추가해주세요! - 거의 익었을 때쯤 버터 2-3개를 넣고 에멀션 시켜줍니다. - 위에 냉장고에 두었던 단새우 타르타르와 오세트라 캐비어, 차이브를 뿌려줍니다 - 인생을 즐기시와요 - Cube 1 carrot, 1 celery stalk, 2 shallots (one onion), and slice 3 garlic cloves and 1red chili pepper. - Peel and clean 15-20 sweet prawns, leaving only the meat. - Coarsely chop 7 prawns and finely dice the remaining 7 prawns. - In a bowl, mix the prawn meat with 2Tof olive oil, zest from 1 lime, and juice from 1/4 lemon. Refrigerate this mixture. - In a pot, add oil and place prawn heads and shells over medium-high heat. Season with salt and pepper and sauté for 3min. - Then add the vegetables and sauté for another 3min. - Add 2T of tomato paste and 300ml of white wine to the pot. Sauté for an additional 4-5 minutes. - Reduce the heat to medium-low and add 500ml of water or chicken stock and about 10 ice cubes. - Tie a bouquet garni made of bay leaves, parsley, basil, chives, and thyme and add it to the pot. Simmer for 30 minutes. - Remove the bouquet garni and blend the mixture. Strain it through a sieve. - Pour the bisque into a large pan.
