✨Roasted Garlic & Whipped Ricotta Agnolotti✨
These agnolotti are melt in your mouth delicious! Definitely one of my favorite fillings and so cozy for fall. My original recipe calls for garlic confit, but I only had bulbs and didn’t feel like peeling them so I roasted them instead! Just as delicious! 🍝🧄

Ingredients:
- 1 cup ‘00’ wheat flour
- 1/2 cup semolina flour
- 2 eggs, 2 yolks
- 1/2 cup garlic cloves, peeled
- 3 tbsp. extra virgin olive oil
- 1 cup whole milk ricotta
- 1/4 tsp. salt
- 6 tbsp. butter
- 2 tbsp. Parmigiano Reggiano, grated
- Crushed red chili flakes to taste
- 1 tbsp. Italian Parsley, finely chopped’
- Extra virgin olive oil, to finish
- Pasta water as needed
