Oven-Baked Salmon with Vegetables & Lemon-Dill Mustard Sauce ๐ โจ(Via: @ikosun_kitchen)
A healthy dinner that looks gourmet but is so easy to make! Juicy salmon, roasted veggies, and a creamy lemon-dill mustard sauce = perfection on a plate.
๐ Ingredients
For the salmon (3 pieces):
* 3 salmon fillets
* 4 tbsp olive oil
* Juice of ยฝ lemon
* 1 tsp mustard
* 2 garlic cloves, grated
* Parsley, finely chopped
* ยฝ tsp black pepper
* ยฝ tsp ground red pepper
* ยฝ tsp chili flakes
* Salt
For the roasted vegetables:
* 500 g baby potatoes
* 2 carrots, sliced
* 2 red onions, chopped
* 5โ6 mushrooms
* 1 tsp thyme
* ยฝ tsp ground red pepper
* ยฝ tsp garlic powder
* ยฝ tsp black pepper
* ยฝ tsp salt
* 4โ5 tbsp olive oil
For the sauce:
* 2 tbsp butter
* 1 tbsp flour
* 280 ml milk
* 1 handful dill, finely chopped
* 1 tsp mustard
* Juice of ยฝ lemon
* 1 garlic clove, grated
* Salt & pepper
๐ฉโ๐ณ Preparation
1. Marinade & Salmon โ Mix olive oil, lemon juice, mustard, garlic, parsley, and spices. Coat salmon and marinate in the fridge for 30 mins.
2. Vegetables โ Boil potatoes & carrots until slightly soft. Toss with onions, mushrooms, spices, and olive oil.
3. Bake โ Spread veggies on a tray, place salmon on top, and bake at 200 ยฐC for 25โ30 mins (last 5 mins at 210 ยฐC for crispy top).
4. Sauce โ Melt butter, sautรฉ garlic, add flour, then slowly whisk in milk. Stir until thick. Finish with lemon juice, mustard, dill, salt & pepper.
โจ Plate up and drizzle that creamy lemon-dill sauce over your salmon. Perfection!
