Juicy salmon, roasted veggies, and a creamy lemon-dill mustard sauce = perfection on a plate. 🐟 Ingredients For the salmon (3 pieces): * 3 salmon fillets * 4 tbsp olive oil * Juice of ½ lemon * 1 tsp mustard * 2 garlic cloves, grated * Parsley, finely chopped * ½ tsp black pepper * ½ tsp ground red pepper * ½ tsp chili flakes * Salt For the roasted vegetables: * 500 g baby potatoes * 2 carrots, sliced * 2 red onions, chopped * 5–6 mushrooms * 1 tsp thyme * ½ tsp ground red pepper * ½ tsp garlic powder * ½ tsp black pepper * ½ tsp salt * 4–5 tbsp olive oil For the sauce: * 2 tbsp butter * 1 tbsp flour * 280 ml milk * 1 handful dill, finely chopped * 1 tsp mustard * Juice of ½ lemon * 1 garlic clove, grated * Salt & pepper 👩‍🍳 Preparation 1. Marinade & Salmon – Mix olive oil, lemon juice, mustard, garlic, parsley, and spices. Coat salmon and marinate in the fridge for 30 mins. 2. Vegetables – Boil potatoes & carrots until slightly soft. Toss with onions, mushrooms, spices, and olive oil. 3. Bake – Spread veggies on a tray, place salmon on top, and bake at 200 °C for 25–30 mins (last 5 mins at 210 °C for crispy top). 4. Sauce – Melt butter, sauté garlic, add flour, then slowly whisk in milk. Stir until thick. Finish with lemon juice, mustard, dill, salt & pepper. ✨ Plate up and drizzle that creamy lemon-dill sauce over your salmon.
