Instructions
1. Prepare Dry Ingredients:
Blend 60 g oats in a mixer until they form a flour-like consistency.
Mix with 70 g almond flour and ยฝ tsp cinnamon.
2. Prepare Vegetables and Fruit:
Grate 180 g carrots and 130 g apple using a grater.
3. Make the Batter:
Soak 2 tbsp raisins in cold water for 15 minutes, then drain.
In a bowl, combine 3 tbsp yogurt, 2 eggs, a pinch of salt, and sweetener to taste.
Add the grated carrots, apple, orange zest, 1 tbsp coconut oil, and raisins. Mix well.
Mix 1 tsp baking soda with lemon juice (to neutralize the soda taste), then add to the mixture.
Combine with the dry ingredients and mix thoroughly. Let the batter rest for 10 minutes.
4. Baking:
Preheat the oven to 180ยฐC (360ยฐF).
Transfer the batter into a 13 cm (5.2-inch) form lined with high-quality parchment paper. If the parchment is of medium quality, grease it with oil.
