1 whole egg 100g Greek yogurt 50g applesauce (steamed and pureed apples)
1 tsp vanilla extract 80g oat flour (blended oats)
60g vanilla whey protein powder
80-100 granulated sweetener (of choice)
20g sf vanilla pudding mix (or 40g more oat flour)
1 tsp baking powder
2 tsp cinnamon 1 tsp ginger
1/4 tsp nutmeg
100g finely grated carrot Frosting: Combine 120g Greek yogurt, 1/4 tsp vanilla extract, 1/2 tsp pudding mix, and 1 Tbsp sweetener.
Topping: 2 biscoff biscuits, chopped METHOD:
👉🏼 Whisk the wet ingredients then stir in the dry. 👉🏼 Add grated carrot and fold into batter.
👉🏼 Transfer batter into 6 mini silicone loaves and bake for approx 20-25 minutes (longer if baking as 1 large loaf). 👉🏼 Let cool before icing and topping with biscoff biscuit crumbs. Macros: 155 calories, 14.5g protein, 3g fat, 17.8g carbs, 4.6g sugar, 2.3g fibre”.
