English Muffins – Ingredients
450 g strong bread flour
7 g sachet active dried yeast
1 tsp salt (optional, but recommended)
280 ml / 1 ¼ cups milk
25 g butter
1 egg
Extra flour for dusting
Somerset Apple Cake – Ingredients
175 g dark muscovado sugar (or stevia as substitute)
125 g butter (room temperature)
2 eggs
225 g wholemeal plain flour
1 tsp ground cinnamon
1 tsp mixed spice (or ¼ tsp each of mace, ginger powder, ground cloves, nutmeg)
2 tsp bicarbonate of soda
4 tbsp milk
450 g cooking apples (Bramley recommended) or Golden apple
Brown sugar (for topping)
Honey (optional, for finishing)
