(럼주가 없다면 절이는 과정은 생략하고 바로 사용합니다.) 2. 달걀 노른자, 달걀 멍울 푼 것을 함께 계량합니다. 3. 아몬드가루, 중력분, 베이킹파우더는 섞어서 2~3회 체에 내립니다. 4. 미리 버터, 달걀은 30분~1시간 전에 실온에 꺼내두어 차가운 기를 없애주세요. [머랭 만들기] 1. 달걀흰자와 노른자를 분리해 흰자만 깨끗한 볼에 담아요. 2. 핸드믹서기를 중저속으로 회전시켜 달걀흰자의 거품을 내요. 달걀흰자가 풀어지면서 큰 거품이 올라오기 시작해요. 3. 흰자 거품이 풍성하게 일면 설탕을 2~3회 정도로 나누어 넣으면서 계속 중속으로 거품을 냅니다. 4. 윤기가 나고 단단한 거품이 될 때까지 핸드믹서기로 계속 거품내어요. 5. 거품기를 들어 올렸을 때 들었을 때 새부리처럼 휘어지는 정도까지 거품내주세요. 과하게 거품내면 푸석푸석해지므로 주의합니다. [반죽 만들기] 1. 볼에 버터를 넣고 풀어준 뒤에 설탕을 2회에 나누어 넣고 거품기로 골고루 섞어요. 2. 달걀노른자, 달걀 멍울 푼 것, 꿀을 아주 조금씩 넣어 가며 버터와 분리되지 않도록 거품기로 잘 섞어요. 3. 럼주에 절여두었던 건과일은 꼭 짜서 물기를 제거한 다음 넣고 주걱으로 섞어요. 4. 머랭의 약1/3정도 넣고 섞어요. 5. 아몬드가루, 중력분, 베이킹파우더를 넣고 주걱으로 자르듯이 섞어주세요. 6. 나머지 머랭도 다 같이 넣고 주걱으로 골고루 섞습니다. 7. 짤주머니에 반죽을 넣고 파운드틀에 약70~80%정도 반죽을 담습니다. (반죽을 넣은 다음 틀을 바닥에 탁! 탁! 내리쳐서 공기를 빼줍니다.) 8. 미리 190℃로 30분이상 오븐 예열해주세요. Make meringue. Separate egg whites from yolks and put it in a clean bowl. 2. Set the hand mixer at low speed, whip the egg white. As you whip it, bubbles start emerging. When you have enough bubbles, add the measured sugar over 2-3 times while whipping it in middle speed. 3. Keep whipping it until it becomes thick and shiny. 4. It should bend a little when you raise the mixer, like this. (Ensure that you don't make it too thick.) [How to make pound cake] 1. Put butter (which was left in room temp) in a bowl, beat it with a hand mixer or a balloon whisk. Add sugar over a few times, mix thoroughly. 2. Add egg yolks and beaten eggs bit by bit, make sure they don't get separated from the butter by mixing well. Add honey and mix well. Mix thoroughly, including what's stuck on the bowl's surface. 3. Squeeze out the liquid from the dried fruits that were put in rum, add them with a spatula. (You can use a liquor of your choice, or even skip that step if you don't have rum.) 4. Put 1/3 of the meringue and mix. 5. Add almond powder, all-purpose flour, baking powder, and mix with a spatula, as if you're slicing the dough. 6. Add rest of the meringue, mix thoroughly. 7. Put the dough into a piping bag. Fill 70-80% of the pan with the dough. (After which, tap it onto the table to remove air.) 8. Preheat the oven at 190°C for over 30 minutes. (for convection ovens) Set the temperature at 160°C, bake for 50-55 minutes. (If the color changes too fast, cover it with aluminium foil to ensure the inside's baked well.)
