Kimchi Jjigae
Ingredients:
Tofu (Firm or Extra Firm is preferred for this!) Thinly Sliced Green Onion Meat (optional if you want it meatless, I used beef stew meat, which is usually a tougher cut like chuck, but you can use others including pork shoulder, belly, etc) Anchovy/Kelp stock (I used bone broth + Korean anchovy broth tablets, you can use any broth/stock or dashi here as well) Kimchi (kimchi jjigae is usually made with overfermented kimchi - a little past it’s prime for eating, but perfect for stew) Korean Red Pepper Powder (gochugaru) Sesame Oil
