Ingredients:
3 eggplants
5 tablespoons yogurt
2 tablespoons tahini
2-3 tablespoons lemon juice
1-2 cloves garlic
Salt
For the topping: Olive oil
Pistachios
Finely chopped parsley
Roast the eggplants. Cover and let them sit for easier peeling. This will make it easier to peel them off. Finely chop the eggplants. Add the yogurt, tahini, crushed garlic, lemon juice, and salt, and mix. Arrange on a serving plate and garnish as desired.
