On our last morning in Greece last week we had breakfast in Athens and I ordered this dish. It was brilliantly simple and delicious all at once. From what I could tell it was simply zucchini ribbons, cheese and an egg… all cooked together in a skillet. I didn’t get any recipe but knew it couldn’t be that hard to replicate. And that’s what I did… and I’ve made it every morning since…. And I’m pretty sure that you will too
No real recipe here but if you watch the video, you can see what I did. I shaved ribbons of zucchini with my peeler. I added a little olive oil to a skillet and cooked them down until softened and starting to get some color. I formed the ribbon pile into 2 piles and shaped it with a little divot in the middle. I dropped some shredded cheese (Im pretty sure feta was used, but certainly any cheese will work!) in the middle and covered for a minute or so until the cheese melted. Remove the top and drop an egg in the middle of each oil. I seasoned with salt and pepper, drizzled with a little chili oil (@flybyjing is my new obsession. I used their sweet and spicy Sichuan sauce here and I could literally put it on everything) and then put the top back on until the egg was set to my liking. Topped with chives
Zucchini. Cheese. Egg. Chili oil. Chives = simply perfect
