Beef Bourguignon 🍷

My version definitely sways a little from the very traditional recipes… I didn’t marinade the beef in the wine overnight ( ain’t nobody got time for that, well I didn’t anyway), I didn’t use bacon lardons as I didn’t have any-nor did I have pickling onions (& guessing most of you won’t have them on hand either)
Regardless, this is a mighty fine Winter comfort meal that only needs about 20 minutes of your attention before it goes in the oven & you can get on with your day.
We have eaten this for the past 3 nights as it makes a lot, but the beauty in that is it gets even better tasting with time.
Recipe ⬇️
1.7kg beef chuck steak
Sea salt and black pepper to taste
2 tablespoons olive oil
2 brown onions, cut into wedges
5 carrots, skin on, roughly chopped
4 cloves garlic, sliced
2 rosemary sprigs
4 thyme sprigs
2 bay leaves
2 tablespoons tomato paste
1 heaped tablespoon plain flour
500g small brown mushrooms
2 cups red wine (I used Pinot noir)
500ml beef stock
1/4 cup flat parsley to serve
Pre heat oven to 160 C. Heat the oil in a large cast iron casserole pan. Season the beef with salt then sear off in batches over a high heat to get some deep brown colour and crust on the outside.
Remove beef from the pan then add in onions and carrots and cook for 2 minutes. Add in garlic and cook for a further 2 minutes. Add in the rosemary, thyme, bay leaves and make a well in the middle of the pan. Add the tomatoes past into the middle of the pan and fry off for 2 minutes. Add in the flour and cook off for a further 1-2 minutes. Tip in the mushrooms and stir for 2 minutes. Pour in the wine and bring the mixture up to a simmer for 3-4 minutes.
Pour in beef stock then return the beef along with any juices into the sauce and a few grinds of black pepper.
Cover with a lid and bake in the oven for 2.5 hours, or until the beef is tender.
Top with chopped parsley and serve with creamy mashed potato on the side
