Ingredients-
Chocolate Simple Syrup
* 1/2 cup water
* 1/2 cup granulated sugar
* 1 Tbsp dark cocoa powder
Dark Chocolate Cake
* 2 cups all-purpose flour
* 2 cups granulated sugar
* 3/4 cup dark cocoa powder
* 2 tsp baking powder
* 1 1/2 tsp baking soda
* 1 tsp fine salt
* 1 cup warm water
* 1 cup sour cream (room temp)
* 1/2 cup oil
* 2 large eggs (room temp)
* 2 tsp vanilla extract
* 1 tsp instant espresso (optional)
Chocolate Buttercream
* 2 cups (4 sticks) unsalted butter
* 1 cup dark cocoa powder
* 1 tsp vanilla extract
* 1/2 tsp fine salt
* 5 cups powdered sugar
* 3/4 cup heavy cream
* 1 1/3 cups melted, cooled dark chocolate
Optional
* Mini chocolate chips
Instructions-
Make the simple syrup by heating the water and sugar until boiling, then whisking in the cocoa and letting it cool. Preheat the oven to 350ยฐF (175ยฐC) and line the cake pans. In a large bowl, whisk the dry ingredients (flour, sugar, dark cocoa, baking powder, baking soda, salt). In a separate bowl, combine the wet ingredients (warm water, sour cream, oil, eggs, vanilla, espresso), then pour the wet mixture into the dry mixture and whisk until just combined. Divide the batter into the pans and bake for 22โ25 minutes. Cool completely and level the layers.โจFor the frosting, beat the butter, then add cocoa, vanilla, and salt. Mix in powdered sugar and cream, then mix in the melted, cooled chocolate until smooth.โจTo assemble, brush each cake layer with simple syrup, spread buttercream between layers, add mini chocolate chips if desired, then stack. Chill briefly, frost the outside, press mini chips onto the sides, pipe swirls on top, and enjoy!
