1 egg
160g Greek yogurt
40g unsweetened applesauce
1 tsp vanilla extract
1/4 tsp almond extract
40g oat flour
30g vanilla whey protein
20g coconut flour
50g granulated sweetener
1 tsp baking powder
1/4 tsp salt
🩵 FROSTING 🩵
100g Greek yogurt
1/4 tsp vanilla bean powder
1/2 tsp instant pudding mix
1 Tbsp granulated sweetener
💜 METHOD 💜
👉🏼 Preheat oven to 180°C / 350°F.
👉🏼 Combine all ingredients.
👉🏼 Divide between 12 mini muffin liners.
👉🏼 Bake for approx. 15 minutes.
👉🏼 Let cool before icing and topping with sprinkles.
👉🏼 Store in the fridge or freezer.
