CHOCOLATE CHIP PUMPKIN BREAD 🧡🍫
I can’t stop making this healthier version of the pumpkin loaf I used to buy from Starbucks! It’s made with more nourishing ingredients and it’s so simple to make because your blender will be doing most of the work!
You’ll need:
1 can pumpkin (or 1 cooked sweet potato)
2 ripe bananas
2 eggs
2 cups rolled oats (gluten-free)
1 tsp baking soda
pinch of sea salt
¼ tsp nutmeg
¼ tsp ginger
1 tsp cinnamon
1 tsp vanilla extract
¼ cup pure maple syrup (or raw honey)
½ cup dark chocolate chips (plus more for topping)
1. Combine all your ingredients except the chocolate chips in a blender or food processor.
2. Stir in chocolate chips.
3. Pour the mixture into a loaf pan lined with parchment paper.
4. Top with additional chocolate chips.
5. Bake in the oven at 350 degrees F for about 30 minutes or until a toothpick comes out clean.
6. Let cool for about 20 minutes. Remove from loaf pan, slice and enjoy! 💛
