PEANUT BUTTER TRUFFLES
Makes 14 Truffles

Ingredients
- 1 cup (96g) peanut butter powder
- 1/2 cup (122g) unsweetened applesauce
- 1/4 cup (43g) low-sugar chocolate chips
- 1/2 tsp (2g) coconut oil (optional - included in macros above)
Directions
1. In a medium bowl, stir together peanut butter powder and applesauce to create a dough.
2. Roll dough into 14 evenly-sized balls.
3. In a microwave-safe bowl, melt chocolate chips in 20-second intervals, stirring between each until smooth. Stir in coconut oil for a glossier coating that sticks to the balls better.
4. Roll each ball in melted chocolate to coat.
5. Place coated balls on a sheet tray lined with parchment paper.
6. Refrigerate for 30 minutes or until firm. Sprinkle with salt.
