• Brew strong black coffee (Vietnamese-style if possible)

Oven method:
• Preheat oven to 200°C for 10 minutes
• Bake at 180°C for 12–15 minutes
Air fryer method:
• Preheat to 200°C for 5 minutes
• Air fry at 170°C for 12 minutes
4. Let the sponge cool completely.
5. Poke small holes in the sponge using a fork or skewer.

• 100g paneer
• 1 cup thick yogurt
• 1 scoop (approx. 32g) vanilla protein powder
• 1 tablespoon monk fruit sweetener
• A pinch of vanilla powder or a few drops of vanilla extract
1. Blend all ingredients until smooth and creamy
2. This is your high-protein mascarpone-style layer
