My Oatmeal Chocolate Chip Cookie Bars are the easiest thing to whip up for a weeknight treat or last-minute get-together.

Ingredients:
1 cup butter, room temp (227g)
1 cup packed light brown sugar (220g)
½ cup granulated sugar (100g)
2 large eggs
2 tsp vanilla extract
½ tsp salt
1 tsp baking soda
1 tsp baking powder
1½ cups all-purpose flour (188g)
2 cups rolled oats (not quick oats) (170g)
2 cups chocolate chips (milk, semi-sweet, or both!) (340g)
Instructions:
Preheat oven to 350°F. Grease or line a 9x13 pan.
In a large bowl, beat butter + sugars until smooth and creamy.
Mix in eggs one at a time, then vanilla.
In another bowl, whisk flour, oats, salt, baking soda + baking powder.
Add dry to wet and stir until combined. Fold in the chocolate chips.
Press dough evenly into the pan.
Bake for 25–30 minutes, until golden on top.
Let cool before slicing into bars!
To Store:
Room temp: 5 days
Fridge: up to 10 days
Freezer: Wrap tightly and freeze up to 1 month
