Chocolate Chip Cookie Baked Oats Recipe (single serving):
½ cup gluten-free rolled oats
1 scoop vanilla protein powder (or sub 2 tbsp almond flour)
1 tbsp almond or cashew butter
½ banana, mashed (or 1–2 tbsp maple syrup)
½ tsp baking powder
¼ tsp cinnamon + pinch of sea salt
1 egg (or flax egg)
¼ cup almond milk
1–2 tbsp dark chocolate chips
Mix all ingredients (except chocolate chips) in a bowl. Fold in chips.
Pour into a greased ramekin or mini baking dish.
Bake at 350°F for 20–25 min until golden and set.
Top with yogurt, nut butter, or melted chocolate if you’re feeling dangerous.
