1. Prepare the Pork Ribs
Cut the pork ribs into manageable pieces if they are too large for easy eating.

Boil the pork ribs in boiling water until they are about 50% cooked.
Remove the ribs from the water and place them on a sieve to drain.
2. Prepare Vegetables
Slice the white part of the green onion into large diagonal pieces.

Slice the garlic into thick pieces.

3. Fry the Pork Ribs
Heat a generous amount of cooking oil in a frying pan to about 90-100ยฐC. Avoid overheating to prevent excessive splattering.

Carefully place the boiled pork ribs into the hot oil and fry them slowly until they turn golden brown.
Once fried, remove the ribs and place them on a sieve to drain excess oil.
4. Make the Sweet and Sour Sauce
In a pan, heat 2 tablespoons of cooking oil and lightly sautรฉ the prepared green onion and garlic to release their aroma.

Add 4 tablespoons of sugar to balance the flavors.

Add a pinch of black pepper for a subtle kick.

Add 1.5 tablespoons of vinegar for acidity, ensuring it doesnโt overpower the sauce.

Simmer the sauce until it thickens and becomes sticky like a glaze, with lots of bubbles forming.
5. Combine and Finish
Add the fried pork ribs to the thickened sauce and toss to coat evenly, allowing the sauce to soak into the ribs.
Continue to simmer until the sauce becomes sticky like candy coating (similar to Korean gangjeong).
Turn off the heat and transfer the Tangsu Galbi to a serving plate.
