Peel and slice 400g of potatoes. Place them in a pot, cover with water, and boil for 20 minutes until soft.

Drain the boiled potatoes and transfer them to a bowl. Add 40g of sugar and mash well. Then, add 50g of glutinous rice flour and mix until a dough is formed.

Take a portion of the dough, flatten it, place mozzarella cheese in the center, and seal it into a ball. Gently press the ball into a pancake shape.

Heat oil in a pan over medium-low heat. Fry the pancakes for 3 minutes on each side until golden brown.

Place the cooked pancakes on a plate and serve immediately while the cheese is melted.
