Ingredients (Serves 4) • 1 x BOSH! Teriyaki Mushroom Noodles (380g) • 4 garlic cloves, grated • 5cm ginger, grated • 6 spring onions (whites + greens separated) • 2 limes, halved • 1 tbsp oil • 1 tbsp crispy chilli oil (+ extra to serve) • 2 tbsp white miso • 3 tbsp smooth peanut butter • 3 tbsp tahini • 2 tbsp maple syrup • 1 tbsp rice vinegar • 400ml coconut milk • 800ml veg stock • 2 tbsp light soy sauce To serve: black sesame seeds, coriander
How to make it 1️⃣ Start the base – Heat oil + chilli oil in a pot. Add garlic, ginger & spring onion whites. Fry 3–4 mins until soft and fragrant. 2️⃣ Build the broth – Stir in miso, peanut butter, tahini, maple & rice vinegar. Add coconut milk + veg stock. Simmer gently. 3️⃣ Heat the noodles – Microwave the BOSH! noodles following pack instructions. 4️⃣ Assemble – Season broth with soy sauce + lime. Divide noodles into bowls, ladle over broth, and finish with spring onion greens, sesame seeds, chilli oil & coriander.
