I’ve always been a huge fan of peanut noodles but I wanted something a little more balanced so I added sauteed vegetables and some crispy air fryer tofu for a complete meal! AND it’s the 2nd recipe in my latest high protein vegetarian meal plan!
Here’s the recipe:
For the air fryer tofu
* 2 14–16 oz blocks super-firm tofu, torn into chunks
* 1 ½ tbs olive oil
* 3 tbs soy sauce, or tamari
* ¼ cup cornstarch
* ½ tsp garlic powder
* ½ tsp onion powder
* ½ tsp sea salt
* ¼ tsp of black pepper
For the peanut sauce
* ⅓ cup natural creamy peanut butter
* ¼ cup soy sauce, or tamari
* 3 tbs maple syrup or honey
* 1 ½ tbs rice vinegar
* 1 ½ tbs sesame oil
* 3 cloves garlic, finely minced
* ½ tbs fresh ginger, grated (or ½ teaspoon ground ginger)
* ½ cup warm water, to thin as needed
For the noodles & veggies
* 1 pound pasta of choice, I love the Trader Joe’s Thai Wheat noodles for this but spaghetti also works well
* 12 oz bag Trader Joe’s Ready Veggies, or other mixed veggies
* ½ cup shredded carrots
* 1 tbs neutral oil
