TUNA CRUNCH BAGELS
AD Upgrade your lunch break with these delicious tuna crunch bagels that are packed full of protein, fibre and energising nutrition. They are ready in under 10 minutes and one of my current favourite lunches on repeat. Using a few of my hero ingredients from the @marksandspencer eat well range including multigrain bagels for a fibre boost, responsibly sourced tinned tuna for protein and fresh parsley for antioxidants.

You will need to serve 2
1 tin drained M&S tuna steak in spring water (120g drained weight)
1 red pepper, diced into small cubes
1/2 red onion, finely diced
2 tbsp of M&S 0% Greek yoghurt
1 heaped tsp American mustard (more to taste)
Handful of chopped parsley
Pinch of chilli flakes
Salt and pepper
2 M&S whole grain bagels
Feta cheese
1. Finely dice the pepper and red onion. Place into a mixing bowl.
2. Add the drained tuna, greek yoghurt, mustard, parsley, salt, pepper and a pinch of chilli flakes. Mix well to combine and taste, adding more of any ingredient if needed.
3. Slice your bagel in 1/2 and place the tuna mix onto each side.
4. Top each bagel with a crumble of feta and an extra pinch of chilli flakes.
5. Either air fry your bagels at 205c for 6 minutes or bake in the oven with the grill setting on at 200c fan for 6-8 minutes until the feta is golden.
