For Chicken Steak:
1 boneless chicken breast
Salt & black pepper (to taste)
2 tbsp all-purpose flour
40g unsalted butter (split in two)
2 garlic cloves, minced
Juice of ½ lemon
1 tbsp chicken stock (or hot water)
½ tbsp flour (for sauce)
Pinch of chili flakes & black pepper
1 tbsp chopped fresh parsley
For Green Goddess Salad:
1½ cup chopped lettuce
1 small red onion (sliced)
1 small cucumber (sliced)
1 tbsp pumpkin seeds
1 tbsp dried cranberries
1 tsp sesame seeds
For Green Goddess Dressing:
2 tbsp yogurt
1 tbsp mayonnaise
1 tsp honey
1 tsp Dijon mustard
Juice of ½ lemon
2 garlic cloves
2–3 spring onions
Handful of parsley + baby spinach
1 tsp red wine vinegar
2 tbsp olive oil
3–4 walnut halves
