I am so excited I finally found wheat cakes! These are like rice cakes but made out of wheat! I have been so eager to try a tteokbokki type dish and I finally got the oppurtinity to! These are like thick chewy gnocchi noodles truly such a delicious bite 😍 I decided to make these into miso butter noodles! I used dashi smooth miso and salted butter that I emulsified then served with a soy sauce egg yolk, toasted sesame seeds, and green onions!
I was really pleasantly surprised how quick and easy the wheat cakes were to make! I just added the water, butter, and miso and they got soft and chewy in just about 5 minutes! I made a soy sauce + Chinese cooking wine marinated egg yolk to add on top! I cannot explain how stoked I am to have this option and how much I will incorporate it into things I make moving forward!
I know a lot of people are going to ask why I can’t eat rice and I don’t think I’ve ever really talked about it on here. A few years ago, I was having terrible migraines almost every day here with crippling stomach issues.. I have always had pretty bad stomach issues, but the migraines were a new and severe symptom. I was always told to cut out gluten, but then later I found out that it was rice and potatoes that were making me sick along with tomatoes and eggplant.
Even though it is unfortunate, I can no longer eat these things- my life is so much happier and healthier without it and I am extremely thankful for the resolution to the discomfort I was having ❤️ I would definitely probably not be as adventurous with my cooking and eating if it wasn’t going through the diet restriction so in a weird way I’m grateful for the experience
