One-Pan Creamy Chipotle Protein Pasta Bake 🍝🔥
4 Servings: 360 cals, 25g protein, 17 net carbs per serving.
This is for when you want a simple meal that will taste like a million bucks. Its a game changer: smoky, creamy, cheesy, and packed with protein. I used my @kaizenfoodco high protein lowcarb pasta here, but use whatever protein or lowcarb pasta you prefer (or even regular). This tastes indulgent weeknight-friendly, so easy, and so good.
Here’s how I made it:
Ingredients
1 large onion, super thinly sliced
2 medium zucchini, super thinly sliced
1 medium red bell pepper, sliced
1 Boursin Garlic & Fine Herbs cheese (150 g / 5 oz) or 1 block feta (4–5 oz)
1 Tbsp olive oil
½ Tbsp garlic powder
½ Tbsp smoked paprika
½ Tbsp chipotle powder
Salt + pepper, to taste
1-2 Tbsp balsamic glaze
1 8-oz box protein pasta (I used Kaizen protein pasta)
Fresh flat parsley and parmesan for garnish
Directions:
1️⃣ Add thinly sliced onion, zucchini, red bell pepper, and a Boursin cheese disk (or feta) to an oven-safe dish. You can swap in any thinly sliced veggie you love.
2️⃣ Drizzle with olive oil, then sprinkle on garlic powder, smoked paprika, chipotle powder,
salt, and pepper.
3️⃣ Cover with foil or parchment (important!) and bake at 400°F for 60–75 mins until soft and caramelized. Your kitchen will smell amazing at this point.
4️⃣ Remove from the oven, drizzle with the balsamic glaze, and stir in a big handful of finely chopped flat-leaf parsley (about 3-4 tbsp… I like a lot of fresh parsley)
5️⃣ Toss with 8-oz cooked Kaizen high-protein fusilli (or your favorite pasta/protein). Top with more parsley, chili flakes, or parmesan if you like. You can also add shrimp, chicken, or any other protein to bump up the protein content.
This is so easy, so good, and all done with one pan (well, except the pasta!) Its just chef’s kiss.
If you make it, be sure to let me know on SHREDHAPPENS
ENJOY!
