die ada 2 tekstur bila kita gigit, chewy dari cranberry dan jg salted caramel . dan sedikit crunchy , tapi bukan crunchy macam kita makan cookies yg ada tambahan cornflakes tu tau!

CRANBERRY SALTED CARAMEL BUTTER COOKIES.
* 180g salted butter. ( soft butter 22°c )
* 90g icing sugar
* 1 medium-sized egg yolk
* 210g low protien flour .
* 30g almond powder.
* 30g dried cranberries ~ chopped small.
*SALTED CARAMEL
- 50g granulated sugar
- a small pinch of salt.
* Salted caramel
- Pour the sugar into a non-stick pan.
- Let it melt without stirring, shaking the pan gently if necessary so that the sugar melts evenly.
- Once the sugar has melted and turned golden brown, add a pinch of salt and stir gently until the sugar is completely melted. Then remove from heat immediately so it doesn't burn.
- Pour the caramel onto a baking sheet lined with silicone or parchment paper. Then spread it out so that the caramel is slightly thin.
- Let the caramel cool completely before chopping into small pieces.
* BISCUIT DOUGH
1. Beat butter on medium speed until creamy .
2. add sifted icing sugar and cream the batter.
3. add egg yolk and mix.
4. Finally sift the low-protein flour + almond powder and mix.
5. Add the chopped cranberries and salted caramel and mix.
6. roll it out into a shape of cylinder 3cm diameter. ( If the mixture is too soft to shape, put it in the fridge for a while).
7. leave it in freezer for an hour.
8. take if out of the freezer and slice into 1.5cm thickness.
9. bake for 25 ~ 30mins ( pre- heat oven to 150°C ).
