Bacon & Garlic Dip
WHAT YOU’LL NEED
500g SunPork bacon, diced
Oil
40 garlic cloves, peeled
2 shallots, diced
140g cream cheese, softened
50g Parmesan, finely grated
4 Tbsp. parsley, chopped
2 Tbsp. chives, chopped
1 lemon, juiced
Salt and pepper, to taste
HOW TO MAKE IT
In a pan over med. heat, cook the bacon until crispy. Remove and set aside, reserving the bacon fat.
Reduce heat to low, add a splash of oil to the reserved bacon fat, then add the garlic cloves and shallots. Cook for 15-20mins stirring often or until golden and caramelised.
Strain the garlic and shallots from the oil, then mash with a fork.
Stir in the cream cheese, Parmesan, herbs, and lemon juice until well combined. Fold through the crispy bacon. Season to taste with salt and pepper.
Serve warm or chilled with crusty bread, crackers, or chips.
