🍪 Pistachio Chocolate Cookies
(Makes 8 cookies)
🧂 Ingredients
Pistachio spread 180g
Milk chocolate 100g (80g for dough / 20g for topping)
Dark chocolate 100g (80g for dough / 20g for topping)
Pistachios 100g (80g for dough / 20g for topping)
Unsalted butter (softened) 120g
Granulated sugar 100g
Brown sugar 50g
Egg 1
Vanilla extract 1 tsp
All-purpose flour 200g
Salt 2g
Baking soda 2g
Baking powder 3g
🧁 Instructions
1. Spread the pistachio spread flat on parchment paper and freeze until firm.
2. Chop the milk chocolate, dark chocolate, and pistachios. Reserve 80g each for dough and 20g each for topping.
3. In a bowl, lightly whip the softened butter with granulated sugar and brown sugar (50g) until well combined.
4. Add the egg and vanilla extract. Mix until smooth.
5. In a separate bowl, mix the flour, salt, baking soda, and baking powder. Add to the butter mixture and mix to form a dough.
6. Fold in 80g each of the chopped chocolates and pistachios.
7. Divide the dough into 8 balls and chill briefly in the fridge.
8. Cut the frozen pistachio spread into small pieces.
9. Take each dough ball, insert a pistachio spread piece in the center, and seal it.
10. Top each cookie with the remaining chopped chocolate and pistachios.
11. Bake at 180°C (355°F) for 16–18 minutes.

🧂 재료
피스타치오 스프레드 180g
밀크초콜릿 100g (반죽용 80g / 데코용 20g)
다크초콜릿 100g (반죽용 80g / 데코용 20g)
피스타치오 100g (반죽용 80g / 데코용 20g)
실온 무염버터 120g
흰설탕 100g
황설탕 50g
계란 1개
바닐라익스트랙 1작은술
중력분 200g
소금 2g
베이킹소다 2g
베이킹파우더 3g
🧁 만드는 방법
1. 피스타치오 스프레드를 종이호일에 납작하게 펴서 냉동실에 얼려둡니다.
2. 밀크초콜릿, 다크초콜릿, 피스타치오를 적당히 다져 각각 80g은 반죽용, 20g은 데코용으로 나눠둡니다.
3. 실온 무염버터, 흰설탕, 황설탕 50g을 볼에 넣고 가볍게 휘핑하여 잘 섞어줍니다.
4. 계란과 바닐라 익스트랙을 넣고 골고루 섞습니다.
5. 다른 볼에 중력분, 소금, 베이킹소다, 베이킹파우더를 넣고 섞은 뒤 버터 혼합물에 넣어 반죽을 만듭니다.
6. 다져 놓은 초콜릿과 피스타치오 80g씩을 넣고 섞어주세요.
7. 반죽을 8등분해 동그랗게 만든 후 냉장고에 잠시 넣어 휴지시킵니다.
8. 얼려놓은 피스타치오 스프레드를 조각 내어 준비합니다.
9. 휴지시킨 반죽을 꺼내 가운데에 피스타치오 스프레드 조각을 넣고 감싸줍니다.
10. 남은 초콜릿과 피스타치오(데코용 20g씩)를 위에 보기 좋게 올려줍니다.
11. 180도(355°F) 오븐에서 16~18분간 구워주세요.
