🍮Greek Yogurt Breakfast Panna Cotta🍮

I love a tasty breakfast—and this one is right up there! It’s creamy, light, and just a little bit indulgent. A brekkie that feels like dessert but still fits the vibe.
This Greek yogurt Panna cotta is officially going to be on rotation at my breakfast table!

Ingredients
• 1 cup Greek yogurt
• 1 cup cream
• 2 tsp vanilla
• Zest of 1 lemon or orange (or 1 tsp orange blossom or rose water essence)
• 3 tbsp caster sugar
• 1 tsp gelatin + 2 tbsp water
Method
1. In a bowl, whisk together 1/2 cup of the cream and all the Greek yogurt. Set aside.
2. In a small saucepan, heat the remaining 1/2 cup cream with sugar, vanilla, and zest over low heat until it just starts to simmer and the sugar has’ melted. Remove from heat.
3. In a separate bowl, combine gelatin with water, stir, then microwave for 20 seconds. Stir again and add to the cream mixture, mixing well.
4. Pour the cream mixture into the yogurt mixture and whisk until smooth and combined.
5. Divide between 4–6 dessert cups (depending on your serving size).
6. Refrigerate for at least 6 hours or overnight until set.
🍓Macerated Strawberries🍓
Ingredients
• 1/2 punnet strawberries, quartered
• A handful of raspberries (optional)
• 2 tbsp caster sugar
• 2 tsp vanilla
• Juice of 1/2 a lemon (zest optional)
Method
Add everything to a bowl, mix gently, and let sit for at least 1 hour to allow the strawberries to soften and release its juices. Spoon over your Panna cotta.
Top with crunchy @gondwanamacadamias granola and honeycomb! (Recipe for crunchy granola can be found in the previous reel👈)
