I was planning to post this video in May for Mother's Day. However, my plan didn't go as expected, so I'm posting it now. As I mention in the video, I love eating no-bake cheesecake more than regular baked cheesecake because it's light and has a mousse-like texture. There's lemon juice in the recipe, and please don't skip it because it makes your cheesecake so much better!

No-bake cheesecake
Cream cheese 200g
Sugar 60g
Sour cream 100g
3 Gelatin sheets (6g)
Heavy cream 35% 150g
Lemon juice 10g
*Cream cheese should be soft at room temperature. If it's cold, microwave it for about 20 sec.
Cookie base
Powdered 50g
Unsalted butter 100g (Room temperature)
Egg 20g
Vanilla extract 3g
Salt 1g
All-purpose flour 150g
*Bake at 350F for about 15 minutes. Baking time can be different depends on your oven and the size of your cookie.
Whipped cream
Heavy cream 35% 120g
Sugar 12g
White chocolate flower
White chocolate 200g
Red cocoa butter colouring as you prefer
