Hello everyone! ๐ I used to make this type of cake a lot when I worked at a hotel. I would prepare a large slab, keep it in the freezer, and cut portions as needed to serve. Feeling nostalgic, I decided to make it again at home, though in a mini version compared to the size I used to make. And of course, I used one of my favorite flavor combinations, strawberry and chocolate. Itโs incredibly delicious and not too sweet. I hope you enjoy the recipe! โจ

Strawberry mousse cake
๐ซ Chocolate sponge
Egg yolk 60g (3 yolks)
Honey 20g
Whites 90g (3 whites)
Sugar 50g
Cake flour 35g
Cocoa powder 15g
Canola oil 18g
Bake at 375F for about 8 minutes.
๐ Pan size: 30cm X 22cm
๐ Used a convection oven, Unox. Baking time will be different depends on your oven and the size of your cake.

Strawberry puree 20g
Water 5g
Sugar 8g
Lemon juice 3g (Or lime juice)
๐ Strawberry mousse
Strawberry puree 140g
Sugar 25g
2 Gelatin sheets 4g
Heavy cream 35% 140g (Whipped)
*15cm square mousse ring
The mousse was 160g for each layer
