If you’ve never added ricotta to your eggs this is your sign to- these are based on the @eggshopnyc ricotta scrambled eggs. The key to the eggs is to stir on low heat in a circular motion until they get so creamy with an almost cloud like texture. I then added some parm, red pepper flakes and scooped onto sourdough.
