Cajun Chicken Bacon Ranch Mac & Cheese

Toss chopped chicken with olive oil and Cajun seasoning, then cook in a hot pan until it has good color and is cooked through. Remove from the pan.

In the same pan, melt butter and whisk in flour for 1-2 minutes. Slowly whisk in whole milk, evaporated milk, and heavy cream until smooth.

Season the sauce with Cajun seasoning and hot sauce. Then, lower the heat and add cheddar, Monterey Jack, Colby Jack, and American cheese, mixing until creamy.

Add cooked pasta shells, the cooked Cajun chicken, and crispy bacon to the cheese sauce. Fold everything together until well combined.

Transfer the mixture to a baking dish, top with more shredded cheese and a sprinkle of paprika or Cajun seasoning.

Bake until golden and bubbly. Garnish with ranch dressing, hot sauce, more bacon, and green onions before serving.
