Creamy Gochujang Noodle & Cucumber Salad!
Ingredients;
Sauce:
2 Tbsp gochujang paste
1/4 cup coconut yoghurt (@raglanfoodco)
1 Tbsp soy sauce
2 Tbsp sesame oil
1 Tbsp apple cide vinegar
1 Tbsp maple syrup (@ceresorganics)
1 Tbsp garlic
1 large cucumber
1 set of noodles
To serve: Crushed peanuts and spring onion
Method:
1. Shake the sauce in a small jar until well combined.
2. In a serving size jar, slice cucumber with a mandolin.
4. Add cooked noodles. Pour in sauce.
5. Serve with crunchy peanuts and spring onion.
(Always eat with chopsticks!!)
