Matcha Chia Pudding Ingredients:
1 tsp matcha powder
1 tbsp water
1 cup plant-based milk
1/4 cup chia seeds
1 tbsp maple syrup
1/2 tsp vanilla extract
Strawberry Chia Jam Ingredients:
1 cup frozen strawberries
1 tbsp chia seeds
1 tbsp water
Optional: sugar or syrup to taste
Yogurt Layer Ingredients:
1 cup plant-based yogurt
A dash of matcha powder
Optional: 2 tbsp unsweetened coconut flakes
Instructions:
For the matcha chia pudding:
In a medium bowl, whisk the matcha powder with 1 tbsp water until smooth. Stir in the plant-based milk, chia seeds, maple syrup, and vanilla extract. Cover and refrigerate for at least 2 hours until thickened.
For the strawberry chia jam:
Combine frozen strawberries, chia seeds, and water in a microwave-safe container. Microwave on high for 90 seconds, stir, then microwave for another 60 seconds if needed. Taste and add sugar or syrup if desired. Let cool and refrigerate until set.
For the yogurt layer:
Spoon half the chia pudding into two glasses. Layer with yogurt, then strawberry jam. Top with a dash of matcha powder, and enjoy! Optional: Repeat the layers and top with fresh strawberries and coconut flakes.
