In a pressure cooker with a drizzle of olive oil, add your pre-seasoned chicken and sauté well.

Once the chicken is browned, add one carrot, one tomato, and half an onion to cook together with the chicken.

Add water until it covers all the chicken, close the lid, and let it cook for 10 minutes after it reaches pressure.

After cooking, transfer the tomato, carrot, and onion to a blender along with a little of the cooking broth and blend until smooth.

Drain any remaining water from the chicken, close the pressure cooker, and shake it vigorously to shred the chicken.

Pour the blended sauce over the shredded chicken and mix everything together until well combined.
