CORN MOCHI INGREDIENTS BY WEIGHT

350g corn kernels, cut from 2 to 3 fresh corn cobs
300g glutinous rice flour (aka sweet rice flour)
120g full fat coconut milk or full fat coconut cream
140g granulated sugar
110g eggs (2 large) OR 6 tablespoons of Just Egg liquid egg replacer
56g butter
1 teaspoon baking powder
Β½ teaspoon vanilla
Β½ teaspoon salt
