Pileshka Supa is a very popular soup in Bulgaria. "Pileshka" in Bulgarian means chicken, so it is a chicken soup with noodles and what makes it so interesting is...buttermilk roux. What?
Taste of this soup is slightly sour and buttermilk roux makes it creamy and very delicious! Adding just ½ tsp of thyme adds another flavor accent to this soup and uniqueness
PILESHKA SUPA
INGREDIENTS:
1½ cup onions
1½ cup carrots
1½ bell pepper
2 cups potatoes
2 cups noodles
½ cup chopped parsley
salt, pepper to taste
½ tsp thyme
2 cups boiled chicken(shredded)
For Roux:
1½ cup buttermilk
1 egg yolk
2 tbsp flour
1 tbsp lemon juice

METHOD:
Cut carrots, onions and bell peppers into pieces and run them in a food processor for about a minute.
In a large skillet add 2 tbsp of cooking oil, add minced veggies and saute for couple minutes, until they are cooked through.
Add them to simmering chicken stock and mix.
Add potatoes, cut into cubes and cook until fork tender.
Add noodles and cook for 5 minutes.
Add spices.
Then add cooked and shredded chicken meat( about 2 cups).
At the last moment add chopped parsley and take off the heat.
Make Buttermilk Roux.
To buttermilk, add egg yolk and mix.
Add lemon juice and flour( 1 or 2 table spoons)
Mix well.
Add hot stock to your buttermilk roux 2 table spoons at a time to bring temperature og your roux up a little bit.
Then, in one sweep, add buttermilk to the soup and mix.
Adjust seasoning.
Your soup is done!
