Japanese beef curry 🍛 Snoopy’s all tucked into a warm, yummy bed and ready for dinner 😴🐾
Curry:
- 1 tbsp butter
- 250g beef (stew cuts like chuck), bite-sized
- 1/2 onion, thinly sliced
- 1 garlic clove, minced
- 1 carrot, chopped
- 2 potatoes, chopped
- Water, enough to cover
- 1/4 apple, grated
- 1 tbsp ketchup
- 1 tsp soy sauce
- 1 tsp honey
- 3 Japanese curry roux cubes
- 2 square dark chocolate (15-20g, 70–85% cocoa)
For the Egg Blanket:
- 1–2 eggs (depending on pan size and how many servings)
- Pinch of salt
- 1 tsp oil
👩🍳 Instructions:
1. In a pot, melt butter over medium heat. Sear the beef until browned on all sides.
2. Stir in the chopped onion and garlic. Cook until everything is soft and golden brown.
3. Toss in the carrots and potatoes. Pour in just enough water to cover the ingredients.
4. Bring to a boil, then reduce the heat and let it simmer gently for about 1 hour or until the beef is tender.
5. Mix in the grated apple, ketchup, soy sauce and honey. Simmer uncovered for 5–10 more minutes.
6. Drop in the curry roux cubes and stir until completely melted.
7. Finally, stir in the secret ingredient: dark chocolate🍫 and mix until it fully dissolves. This adds a rich, deep flavor to the curry.
8. Crack eggs into a bowl, season with a pinch of salt and beat well. Heat a pan with a little oil, pour in the eggs and cook over low heat until just set like a thin omelet. This will be Snoopy’s blanket.
9. Shape warm rice into Snoopy’s head, body, arms and feet using plastic wrap. Use small pieces of seaweed to decorate his face.
10. Spoon the curry onto a plate and gently place the Snoopy-shaped rice on top. Drape the egg blanket over the rice like he’s tucked into bed.
11. Optional: Garnish with carrot flowers and a touch of parsley for a cute final touch.
