Today I'm sharing my recipe for vegan stuffed baked potatoes with baked vegetables and creamy cashew sauce. Perfect as a healthy dinner, easy to prepare, and truly filling. This dish is not only vegan and gluten-free, but also ideal for meal prep and tastes delicious both hot and cold.
I simply bake the baked potatoes in the oven, fill them with seasoned vegetables like zucchini, peppers, and carrots, and top them with homemade cashew cream. You only need a few ingredients and no effort. For busy days or when you just want something healthy from the oven.

โข 2 large waxy potatoes
โข 1 small zucchini
โข 1 bell pepper
โข 1 carrot
โข 1 spring onion
โข 2 tbsp olive oil
โข Salt, pepper, paprika to taste
โข 1 red onion
For the cashew cream:
โข 100 g cashews (ยพ cup), soaked in water for at least 1 hour
โข 1 garlic clove
โข 1 tbsp lemon juice
โข 1 tbsp nutritional yeast (optional)
โข Salt, pepper
โข approx. 80โ100 ml water (โ to ยฝ cup)
