Chia Seed Date Chocolate Mousse

Ingredients
Serves 2
4 Medjool dates, pitted
250g Greek Yogurt - I used Fage 5%
80ml milk - I used semi skimmed
2 tbsp cocoa or cacao powder
3 tbsp chia seeds
1 tsp vanilla extract
To top
1 strawberry, halved
4 tbsp Greek yogurt
Sprinkle cocoa powder
Method
1. If your dates are too hard soak them in hot water for a few minutes.
2. Add the softened dates to a blender along with the Greek yogurt, milk, cocoa powder, chia seeds, and vanilla extract. Blend until smooth and creamy!
3. Spoon the mousse into two small bowls or ramekins. Place them in the fridge for at least 3-4 hours to allow the chia seeds to swell and naturally thicken the mousse.
4. When ready to serve, top each portion with 2 tablespoons of Greek yogurt, half a strawberry, and a light dusting of cocoa powder!
