โข Water: 385 ml / 13 fl oz / 1.63 US cup (18โ22 ยฐC / 64.4โ71.6 ยฐF)
โข Instant dry yeast: 6 g / ~2 tsp
โข Bread flour (11.5% protein): 550 g / 19.4 oz / ~4.6 cups
โข Salt: 6 g / ~1 tsp
Method (summary) ๐ฉโ๐ณ
Mix to combine (if dry flour remains, sprinkle a little water). Cover and cold-ferment in the fridge 10โ12 h. Divide 4, shape rounds, proof 30 min. Spray, sesame, score. Steam-bake 220 ยฐC / 428 ยฐF for 20โ22 min (put hot water in a tray for steam).
