Ingredients (US + Metric) 🧾
• Water: 385 ml / 13 fl oz / 1.63 US cup (18–22 °C / 64.4–71.6 °F)
• Instant dry yeast: 6 g / ~2 tsp
• Bread flour (11.5% protein): 550 g / 19.4 oz / ~4.6 cups
• Salt: 6 g / ~1 tsp
Method (summary) 👩🍳
Mix to combine (if dry flour remains, sprinkle a little water). Cover and cold-ferment in the fridge 10–12 h. Divide 4, shape rounds, proof 30 min. Spray, sesame, score. Steam-bake 220 °C / 428 °F for 20–22 min (put hot water in a tray for steam).
