Filo Pastry Apple Pie 🍎
Unlike a traditional pie with a thick crust, this version is light, crunchy, and beautifully delicate.
Every bite shatters with texture and melts into the warm sweetness of cinnamon-scented apples. It’s a comforting twist on the classic apple pie, elegant enough for entertaining yet simple enough to enjoy any day.
Ingredients:
-7-8 filo pastry sheets
-coconut oil for brushing (or melted butter, olive oil)
-2 large apples
-3 large eggs
-2 tablespoons yogurt
-3 tablespoons maple syrup
-1 teaspoons cinnamon powder
-150ml milk
-vanilla extract
Instructions:
1. Preheat your oven to 180°C/356°F.
2. Brush the baking pan with coconut oil or butter.
3. Lay one sheet of filo pastry onto your workspace and brush with coconut oil (butter or olive oil). Fold the pastry in an accordion-style.
4. Transfer the folded filo pastry to your baking pan and place it in the middle. Repeat with the remaining filo pastry until your pan is full.
5. Wash apples, remove core and thinly slice them. Arrange the slices between the filo pastry pleats.
6. Place the eggs in a bowl together with yogurt, maple syrup, cinnamon, milk and vanilla extract and whisk.
7. Pour the egg mixture evenly over the pie case. Bake for 35-40 minutes until the top becomes golden brown and the egg mixture has set.
8. This apple pie can be served either hot or cold. Enjoy!
