Ingredients
Water: 365 ml / 1.5 cups, cold (18–20°C / 64–68°F)
Honey: 1 tbsp
Instant dry yeast: 6 g / 2 tsp
Bread flour (≈12% protein): 500 g / 4 cups + 1 tbsp
Salt: 8 g / 1.5 tsp
Optional topping: sesame + nigella seeds; milk for brushing
Method (summary)
In cold water, whisk yeast + honey until fully dissolved. Add flour and salt. Mix until no dry flour remains. If you see dry flour at the bottom, lightly moisten and mix; it becomes much easier.
Cover and refrigerate 10–12 hours (cold rise). The dough should be soft and elastic.
Lightly flour the top, gently scrape out without pressing down. Shape into a large ball, then divide into 3 pieces and tighten each into a ball.
Place on a tray, cover, rest 30 minutes at room temperature. Brush with milk and shape before the milk dries.
Top with sesame + nigella. Bake at 220°C / 428°F for 15–20 min. For steam, put a bowl of boiling water on the oven floor.
